Baked potato slices

Tonight I decided to try out a pinterest recipe. Baked potato slices with cheese, bacon bits and green onion. We LOVED them!!! Can't wait to make them again

What you need:

Potatoes, shredded cheese, bacon bits, green onion (cut up), vegetable oil, Pam cooking spray

How to make them:

Cut potatoes in slices, about 1/2 inch thick or so.
Coat potatoes in vegetable oil. Put potatoes onto Pam-sprayed cookie sheet/baking sheet.
Sprinkle some pepper and salt onto potato slices, to desired taste.
Bake potatoes at 350* until you can easily stick a fork in them (about 30-45 minutes, depends if you're cooking something else with them like I was!)
After the potatoes are cooked, pull them out and top the potatoes with shredded cheese, bacon bits and green onions.
Put back into oven for about 3 minutes, just until the cheese melts.
And you're done!!!

I think I'll try to make these at our next BBQ and see how quickly they disappear.

Making teacher gifts

Today Jackson and I started on making his teacher gifts for the last day of school. He has 7 teachers!!!! And he's only in preschool (and speech and OT..) :) we had fun making them so far. Here's a sneak peek.
